Pinned There, Done That: Meltaway Cookies

Last week, I took the plunge and finally joined the rest of the world on Pinterest, and while I've already pinned dozens of things I'll probable never make or do, I decided to make a concerted effort to actually give some of my pins a try - and share the results with you on the blog!

From now on, I'll be sharing my real-life renderings of Pinterest finds in these 'Pinned There, Done That' posts. It won't be a regular feature, and I can't promise that my attempts will turn out anything like the original - but really, isn't that all part of the fun?

So, without further ado, here's my first attempt at putting a Pin into practice: Meltaway Cookies from Landee See, Landee Do.

So, what do you think? Differences in lighting aside, they're pretty close, right?

I'll be honest, I had a few issues with these cookies. First of all, you don't get that many cookies for your two sticks of butter. The meltaway texture is due, in large part, to the recipe's high butter-to-dry-ingredient ratio (as well as the addition of velvety cornstarch). This is good news for lovers of buttery goodness, but bad news for bulk eaters - so if you want fistfuls of cookies, you'd better stick to your sugar cookies or chocolate chips!



My second issue was with the texture which, while meltingly delicious, was decidedly crisp. I guess this should have been obvious, given the amount of fat in the recipe, but I'm a lover of chewy, gooey cookies so I'll undertake a little next time I whip these up. That being said, I will whip them up again, because the flavor really is good.



Intensely buttery, without a hint of cornstarch (which was a concern of mine!), most of the sweetness actually comes from the icing. The originals were slathered in cream cheese frosting, but I used a basic buttercream. I'd like to say it was a deeply considered decision, but I just didn't have any cream cheese on hand and didn't want to make another trip to buy some. As it turned out, the buttercream was a perfect complement to these cookies, so I won't be buying cream cheese next time, either.


Meltaway Cookies
from Landee See, Landee Do

1 cup butter, room temperature (I used salted)
3/4 cup cornstarch
3/4 cup powdered sugar
1 cup all purpose flour

Preheat oven to 350°F. Cream butter until fluffy. Add cornstarch and sugar and mix until well incorporated. Stir in flour until well mixed. Drop by small spoonfuls onto a baking sheet, about two inches apart. Flatten with the bottom of a glass (be sure to flatten uniformly or your edges will brown - you can dip the glass in powdered sugar to prevent sticking, if necessary). Bake for 10-12 minutes or until cookies appear 'set' and very slightly browned. Cool completely and frost with your favorite icing.
